Basic Sugar Cookies
Yield: 32 cookies
Ingredients:
½ cup lard or vegetable shortening, melted and cooled
½ stick (1/4 cup) unsalted butter, melted and cooled
1 cup sugar plus additional for coating the cookies
1 large egg
1-teaspoon vanilla
2 cups all-purpose flour
2 teaspoons baking soda
¾ teaspoon salt

Directions:
Stir together lard or shortening, butter, 1 cup of sugar, egg, and the vanilla in a large bowl. Sift together the flour, baking soda, and salt into the bowl. stir until the mixture forms a dough.
Preheat the oven to 375F. Roll the dough into rounded tablespoons, then roll in the additional sugar, coating them completely. Place the cookies 3 inches apart on lightly greased baking sheets. With the bottom of a glass, flatten the balls and bake in the oven for 8 to 12 minutes, or until pale golden. Transfer the cookies to cooling racks and let them cool completely. Keep them stored in an airtight container for up to 1 week
