Apricot Chicken

Yield: 6 Servings

Chicken Marinade:

2 pounds boneless skinless chicken breasts cut into (approximately) 1-inch cubes
2 ½ tablespoon Malaysian Ginger Curry or Ground Ginger
¼ cup olive oil

Coat Chicken with Malaysian Ginger Curry and olive oil in a medium sized bowl. Can be done ahead of time.

Sauce

1 Ib dried apricots, roughly chopped
½ cup orange marmalade
2 tablespoon apple cider vinegar
1 tablespoon unsalted butter
3 tablespoon olive oil
1 chopped carrot
1 finely chopped onion
2 cups chicken stock or broth
1 tablespoon chopped fresh rosemary
1 teaspoon Cinnamon
¼ teaspoon Allspice
¼ teaspoon Chili Powder
2 teaspoons Tabasco or other hot sauce (you can add more if you like)
1 teaspoon Herbed Sesame Blend or regular sesame seeds
Salt and pepper to taste

Method:

1. Place the chopped apricots, orange marmalade and apple cider into a food processor and blend into a puree. Set-aside until ready to use.

2. In a large sauté pan, heat 1 tablespoon of the butter and 1 tablespoon of olive oil over medium-high heat. Working in small batches, place chicken pieces in the pan, without crowding, brown them on each side and cook thoroughly. As the chicken cooks, sprinkle with salt. Once the chicken is browned, remove the pieces from the pan to a bowl and set aside. Add the remaining oil to the pan and sauté the onion and carrot until it begins to brown. As the onions and carrots cook and releases moisture, use a flat edged spatula or wooden spoon to scrape off the browned bits from the chicken from the bottom of the pan.

3. Once the onions and carrots have cooked, add the chicken stock and lower the heat to medium. Pour the apricot purée into the pan with the chicken stock and onions. Add the rosemary, cinnamon, allspice, chili powder and Tabasco and taste. You may need to add some salt. Bring to a simmer, then lower the heat and gently simmer for 10-20 minutes. When you are ready to serve, put the chicken into the pan. Serve hot with rice and sprinkle Herbed Sesame Blend on top.
