Mozzarella & Basil Grilled Cheese
Yield: 4 servings
Ingredients:
4 slices (not too thick) egg bread
¼ cup melted butter (1/2 stick)
6 slices fresh mozzarella
8 fresh basil leaves
Salt and pepper to taste.
Directions:
Set a large frying pan over medium heat. Butter one side of each slice of bread, add four slices of mozzarella and four basil leaves to the non-buttered side of one slice of bread, continue to do the same with the other slices. Sprinkle salt and pepper on top of the mozzarella slices and basil. Top the slices of bread (with mozzarella and basil on it), with the other slice of bread (buttered side facing out). Place each sandwich in the pan and fry on each side until golden and cheese begins to melt (3 to 4 minutes per side). Cut the grilled cheese diagonally and serve as is or next to a mug of tomato soup.
